Yellow Cake!!

Yellow cake is a classic birthday cake, and 
pairs especially well with chocolate frosting.
Be careful, though; this cake can be very
crumbly at times!

Ingredients:
  • 1 cup unsalted butter, room temperature
  • 2 cups sugar
  • 4 eggs
  • 2 egg yolks
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 3 cups flour
  • 2 cups buttermilk**
  • 2 1/2 teaspoons vanilla extract

Method:
  1. Preheat the oven to 350* F. Grease and lightly flour 2 pans.
  2. Cream together butter and sugar. Add eggs one at a time (be sure that each egg is fully incorporated before adding the next.) Do the same with the egg yolks.
  3. Whisk the salt, baking powder, and flour together in a separate bowl. Alternate this dry mixture and the buttermilk in several batches, then add the vanilla. **I did not have buttermilk at hand, and I found that roughly 3/4 cup of plain yogurt and water mixed to the right consistency will work in a pinch!
  4. Pour the batter into prepared pans and bake for about 30 minutes, more or less depending on the size of the pan used. Be sure to wait until cake is completely cooled before unmolding it from the pan.
